For me: anything from Nobuo Uematsu of Final Fantasy fame. (except his death-metal pieces from 10. I'm not into that stuff, it scares the heck out of me.) Capcom also made many of my favorite game tracks. The Megaman X games (X1 most of all) and the Street Fighter games all have wonderful music.
Castlevania, Starfox, Zelda, Mario, Chrono Trigger... There's just too many for me list. But I will give honorable mention to Marvel Superheros Alaska stage on the SNES.

Track 1. Katamari on the Swing. Game: We Love Katamari An awesome J-swing tune that sets the mood for more quirky katamari rolling action. http://gh.ffshrine.org/song/241/4 Track 2. I love the main theme of Psychonauts, from the Monkey Island series: The main there, LeChucks theme, Largo's theme, and the processes shop bg music. From FFIX I love "You're Not Alone" and anything that has Kuja in the scene. From Grim Fandango I really like the bg song called "Swanky Maximino" and of course anything from Parappa the Rapper or Um Jammer Lammy. And so I'll add to Ditchy, I love your avatar! Thats my fave part of Parappa2!

I also love the music from the PC game The Movies. I love the different styles of music they did for the different genres for the game!
