The Back to the Future theme would be somewhere at the top of my list. I love that catchy piece of orchestration so much that I've had it as my mobile ringtone for years, and I have no plans of retiring it for now.
Then of course there's Carter Burwell's score for the Hudsucker Proxy, which is wonderful, particularly that lovely little track at the beginning known as "Norville's Suite". He also put together a great little theme for Adaptation, which for some reason always makes me think of marching ants. Then there's that beautifully chilling one he composed for Being John Malkovich - it's always a treat whenever he gets together with Charlie Kaufman or the Coens.
What else is there? The Untouchables (GREAT end-credits music), Watership Down, Ratatouille, Brazil, Birdy (Peter Gabriel - nuff said), Donnie Darko, When the Wind Blows...the list goes on and on, though I think I've covered most of my main favourites.
